Must- Have Szechuan Chilli Oil Recipe

Evening all! Here's what you definitely need in your fridge at all times! I've tried this a number of times using different ingredients, and this is what seems to work for me. I put this on everything! Absolutely everything, and you will too once you've tasted it. It also makes for an amazing gift! Enjoy, and let me know if you make this.


Ingredients:

4 cups sunflower oil

3 inch nub ginger, skin on and sliced

5 large garlic cloves, crushed

2 cups dried chilli flakes

4 tsp crushed Sezchuan peppercorns

4 tbsp dried shrimp or 4 strips of dried anchovies

4 star anise

3-4 bay leaves

1 tsp cumin seeds or powder

1 cinnamon stick or 1 tsp powder

2 tsp salt




Method:


First, sanitize some jars with a tight fitting lid. Fill a deep pot with the jars and water. Bring to a boil and let simmer for 10-15 mins. Take out, let dry and put aside.




Place all ingredients except chillies, and if using powdered cumin and cinnamon, in a pot, on very low heat. You just want the garlic and ginger to sizzle but not burn or turn a colour.





Let this simmer for 30 mins to 2 hours, (the longer the better). Do not let this come to a boil.


Add the powdered spices and turn up the heat. This time, let this come to a boil. Once boiled add the chillies in. It will bubble up but don't worry, just be careful. Or, if you just want just the oil, sieve away the spices. Let cool.




Pour the chilli oil into the jars. Let cool and store in the fridge. This can keep for a month.
