Grilled sea bass with ginger, chilli, soy & balsamic vinegar recipe





This is a meal you can do in 15 minutes! I pinky swear! But do pat yourself on the back if you do manage it in 15 minutes, and, FYI, you have my full support on however way you wish to demolish the fish once it's cooked. I would, however, suggest inhaling this with some boiled rice.


This dish requires ingredients most of you will already have in your kitchen. So let's get started!


Ingredients:

1/4 Cup Olive oil

3 Inch Nub of Ginger

4 Garlic Cloves, Chopped

3 Whole Green Chillies, Sliced

2 Tsp Demerara Sugar

4- 5 Tbsp Soy Sauce

2 Tbsp Balsamic/ distilled vinegar

1/2 - 3/4 Cups Water

1 Tsp Sesame Oil

2-3 Sliced Red Chillies

Small handful of coriander, chopped

1/2 Small Red Onion, Sliced


Method:

Make cuts across the fish or one long slit 3/4 of the way down the side, starting from the fin to the tail. Rub the oil, lemon, salt & pepper all over the fish. Place under the grill.

Heat the olive oil on a medium-high heat, add garlic, then ginger and let cook for a minute or 2, then add the chillies. Once you can smell the chillies (less than a minute), add soy sauce, balsamic vinegar and water. Let reduce, and keep warm.

At this point, flip the fish over to grill other side. Once the fish is cooked, sprinkle the red chillies and red onions on it. Turn up heat on the sauce, let it come to a boil, and quickly pour over the fish. It will sizzle so don't worry. Just be careful. Drizzle some sesame oil, sprinkle some coriander, et vòila! Enjoy!
